A Remodel Is Planned: Carry the Old Unit Through It or Not
Before a kitchen remodel, an older Sub-Zero can be kept and protected through the work or replaced as part of it, and the opening sizes largely decide which.

A remodel turns a repair question into a timing question
Whether the unit runs fine or already needs a large repair, a remodel changes the arithmetic. The cabinetry around it is being built new, so the cabinet work a replacement normally drags in is already on the plan.
Carrying the old unit through means the new cabinets are drawn around its opening. That ties the new kitchen to the old appliance's sizes, and a later replacement meets the fitting problem the remodel could have settled. Neither path is wrong; the question is which appliance the cabinetry is drawn for.

What the unit needs while the kitchen around it is torn out
If it is being switched off for the work, use POWER on its own control panel; Sub-Zero's Classic use and care guide says that makes unplugging or tripping the breaker unnecessary. For weeks off, the same guide's routine applies: empty it and block the doors slightly open.
If it stays on, keep its grille clear: the condenser behind it breathes room air. Keep sanding dust away too; Sub-Zero warns that a condenser left dirty can lead to temperature loss, mechanical failure or damage.
If it is moved and spends time on its back or side, the Classic installation guide says it must stand upright for a minimum of 24 hours before power is connected.

New cabinetry is only as good as the sizes it is built to
Opening sizes and the dimensions of custom door and grille panels are set per model in Sub-Zero's installation and design guides. The Classic installation guide calls panel size critical for a proper fit and sends you to the design guide for the figures. For 600-series overlay grille panels, the installation guide warns that a panel larger than listed may restrict air flow to the compressor area.
So the cabinetmaker needs the guide for the exact model that will stand in that opening, old or new, before the drawings are final. A tape measure on the old opening is how a new kitchen ends up with a unit running warm behind its trim.

A fault on the old unit is cheapest to settle before the cabinets arrive
If the unit already misbehaves, have it diagnosed before the cabinet order is placed. You then know two things together: what the repair involves, and which sizes the opening has to keep. The $89 service call covers that diagnosis and is credited if the repair goes ahead.
A repair done before the work starts also means the unit is tested and running when the new panels go on, rather than being pulled out again from inside finished cabinetry.

Step by step
Before the cabinetry is ordered
- Find the model and serial tag
On Classic, 600 and 500 series units it sits inside the door near the top hinge; Designer columns carry it inside the middle drawer.
- Get that model's installation and design guides
Sub-Zero publishes them by model. They hold the opening sizes and the custom panel dimensions the cabinetmaker will work to.
- Hand the sizes to the cabinetmaker in writing
Give them the guide itself rather than a measurement of the old opening, and ask that the drawings name the model they were drawn for.
- Check any grille panel against the guide
An overlay grille panel has to stay within the size the guide lists; a larger one can cut the air reaching the compressor area.
- Plan where the unit stands during the work
Decide whether it stays in place, switched off and shielded from dust, or moves out; if it travels on its back or side, it stands upright before power returns.
- Keep the grille uncovered whenever it runs
Dust sheets, boxes and new trim leaned against the grille all block the air the condenser needs, so while it is on, the grille stays open.
